Brownies made with oat bran.
Love the name or hate it, it's far too clever to be called anything else. I prefer to associate it with a rich and gooey square of comfort food straight outta yo granny's oven. A granny brannie.
Perhaps you were thinking more along the lines of RuPaul's fiercest dessert bar. Tranny brannie? Eh? No?
Either way, it's a self-explanatory name for a tasty wholesome recipe, and who doesn't love that?
Also, dang. These are delicious.
Brannies (Dairy-Free, Wheat-Free)
1/2 cup coconut oil, softened
1/4 cup nut butter (I used peanut butter)
3 teaspoons vanilla
2/3 cup honey (or other liquid sweetener)
1/2 coconut sugar
2 cups oat bran
2/3 cup rye flour
1/2 cup unsweetened cacao powder
1/3 cup vegan (or non vegan) chocolate chips
coarse sea salt for topping
Preheat oven to 350 degree. Grease an 8" x 8" brownie pan.
Cream eggs, coconut oil, nut butter, vanilla, honey, and coconut sugar together. Add oat bran, rye flour, and cacao powder and mix until just combined. Fold in chocolate chips. Pour batter into brownie pan and sprinkle coarse sea salt on top. Bake for 15-20 minutes. Be careful not to overcook!
Let mostly cool before slicing into squares and calling up your favorite tranny granny to share share a hot mess of a brannie sundae.
